"The Saluki is represented in Sumarian carvings dated back to 7000 B.C. It is said that whenever one sees the word 'dog' in the Bible it means the Saluki"

Dogs weren't spoke of highly in the bible. They were described as scavengers for the most part and not companions.
The only breed of dog mentioned by name in the Bible is the greyhound (Proverbs 30:29-31, King James Version):
There be three things which go well, yea, Which are comely in going; A lion, which is strongest among beasts and Turneth not away from any; A greyhound; A he-goat also.

It takes an American point of view to think that the greyhound was named in the bible I think.
We have seen more often that while translating these old books, some people used examples of things they knew, to make a point. Simple logic and seeing what breeds are still used in the countries can only point to wards two breeds, the Persian Greyhound (Saluki that is) or the Sloughi. I know it is hard to accept for some greyhound owners, but these breeds are older than the western greyhound.

Huh? #4_6_2v# The King James vesion was published in 1611 in England for the benefit of the Church of England. Seeing America wasn't a yet country it is impossible we had any input on this text. It is more probable that "greyhounds" was used in this version of the bible because King James I enjoyed coursing his greyhounds. So let's pin this one on the British :o The New American Standard Bible is "our" version and it does not use the word "greyhound" anywhere in it. In fact, the same verses from Proverbs read: There are three things which are stately in their march, Even four which are stately when they walk: The lion which is mighty among beasts And does not retreat before any, The strutting rooster, the male goat also, And a king when his army is with him.

I do believe Salukis are the original sighthound, and the other breeds are their own country's versions of the generic "Greyhound" type, which is our original, desert bred Saluki

I have a Saluki and a Greyhound...Both are sighthounds but so different in looks and traits.
